Spam Sushi Bowl

We love our sushi, but sometimes don't feel like putting the time in on it. And we love the Hawaiian style Spam sushi which brings us to this dish.
1. Cook the rice. Sushi rice is most appropriate but we also use jasmine if we're out. We generally use 2:1 water to rice with some salt in it. Cook it uncovered on high until the water mostly evaporates and there are dimples left in the rice. Cover, shut off or move to another burner on low depending on your stove and leave covered for 20 minutes. Once finished, dump the rice immediately onto a baking sheet and spread out as if you are preparing it for sushi. Sprinkle with seasoned rice wine vinegar, or plain if that's what you have.
2. While the rice is cooking prepare the Spam. We cut it into decent sized dice, but it's also fun to slice them lengthwise and make a layered sushi. Fry it in a hot pan, we used minced ginger and garlic with it. Make sure it gets a good sear on all sides of the Spam.

 3. Meantime prepare the additions, we were lucky to pull from our garden some spinach, cilantro and green onions. Most any dark green veg will be nice though these herbs are hard to substitute.


4. We mixed that up with some shredded cabbage and carrots. Along with rice wine vinegar, raw garlic and ginger, and black sesame seeds, seasoned with ground coriander, salt and pepper. This is a great recipe to use whatever vegetables you have handy. 
 5. Just before serving, fry the eggs in the wok that that Spam was in. We like sunny side up for this dish. You can serve these a la carte, or mix the rice and Spam together and the veg together. (Mixing the rice and Span together ensures more equal distribution of Spam between family members:-) Another important addition is viewed lower - the nori sheets. A pair of scissors quickly cuts them up into thing strips about 3 inches long.

6. Pile it up onto a plate. Lots of great possibilities for garnishes. This time we added avocado and Asian hot sauces.
